Basic Fried Rice



2 tablespoons oil
1 diced white onion
1 diced carrot
2 cloves minced garlic
1 teaspoon minced ginger
1 beaten egg 
½ cup frozen peas
3 cups overnight white rice
2 tablespoons soy sauce
½ teaspoon sesame oil
2 green onions cut into rounds 

Heat oil in hot pan or wok, add onion and carrot and sauté until golden. Add garlic and ginger and cook for 30 seconds. Beat whole egg and add in stream to the hot wok, stirring. Add the rice, the soy sauce and the sesame oil and toss until the rice is nicely browned. Garnish with scallions.
