Honey Roasted Red Potatoes


1 pound red potatoes, cut into 1 inch chunks
2 tablespoons minced onion
4 tablespoons butter, melted
2 tablespoons honey
2 teaspoons mustard powder
Salt and pepper

Preheat the oven to 375 degrees. Coat a baking dish lightly with oil and arrange potatoes in single layer, sprinkling onions over top. Combine the butter, honey, and mustard powder and drizzle over all, tossing to coat. Roast for 40 minutes, stirring occasionally. To crisp, broil for 2 to 3 minutes.
